Spring Asparagus Risotto

🌱 Creamy arborio rice with tender asparagus, fresh herbs, and a splash of lemon for a bright, seasonal flavor. A perfect dish to welcome spring!

Ingredients

• 1 cup arborio rice

• 1 bunch fresh asparagus (about 1 lb), trimmed and cut into 1-inch pieces

• 1 small onion or shallot, finely diced

• 2 cloves garlic, minced

• 4 cups vegetable broth (kept warm)

• 2 tbsp olive oil or unsalted butter

• ½ cup dry white wine (optional)

• ½ cup grated Parmesan cheese (or nutritional yeast for dairy-free)

• Zest and juice of 1 lemon

• Salt and black pepper, to taste

• 2 tbsp fresh parsley or chives, chopped (plus extra for garnish)

Instructions

1. Prepare the Asparagus

• Bring a small pot of salted water to a boil.

• Blanch the asparagus pieces for 2–3 minutes until just tender and bright green.

• Drain and transfer to a bowl of ice water to stop cooking. Set aside.

2. Sauté Aromatics

• In a large skillet or saucepan, heat the olive oil or butter over medium heat.

• Add the onion and cook until translucent, about 3 minutes.

• Add the garlic and cook another 30 seconds, until fragrant.

3. Toast the Rice

• Stir in the arborio rice and cook for 1–2 minutes, stirring constantly, until the grains are lightly toasted.

• If using, pour in the white wine, stirring until it is mostly absorbed.

4. Add the Broth Gradually

• Add 1 ladleful of warm broth to the rice. Stir continuously until it is mostly absorbed.

• Repeat this process, adding broth one ladle at a time, stirring frequently.

• Continue for 18–20 minutes, or until the rice is creamy and al dente.

5. Finish the Dish

• Stir in the blanched asparagus, Parmesan cheese, lemon zest, and lemon juice.

• Season with salt and black pepper to taste.

• Stir in the fresh parsley or chives and remove from heat.

6. Serve

• Spoon into bowls, garnish with additional herbs and a sprinkle of cheese if desired.

• Serve warm, with a side of crusty bread or a light salad.
