Grilled Zucchini and Corn Salad

A fresh and flavorful celebration of early summer produce—this grilled salad combines smoky zucchini and sweet corn with herbs and a zesty vinaigrette. Perfect as a light main or a crowd-pleasing side.

Ingredients

For the Salad:

• 2 medium zucchini, sliced lengthwise into ¼-inch planks

• 2 ears of corn, husked (or 1½ cups frozen corn, thawed)

• 1 tbsp olive oil

• Salt and black pepper, to taste

• ½ cup cherry tomatoes, halved

• ¼ cup red onion, thinly sliced

• ¼ cup fresh basil or parsley, chopped

• ¼ cup crumbled feta cheese (optional)

For the Citrus Vinaigrette:

• 3 tbsp olive oil

• 2 tbsp fresh lemon juice (or lime juice)

• 1 tsp Dijon mustard

• 1 tsp honey or maple syrup

• ¼ tsp salt

• Fresh ground black pepper, to taste

Instructions

1. Grill the Vegetables

• Preheat a grill or grill pan over medium-high heat.

• Brush zucchini planks and corn with olive oil and season with salt and pepper.

• Grill zucchini for 2–3 minutes per side until tender and slightly charred.

• Grill corn, turning occasionally, for 8–10 minutes until evenly charred.

• Let cool slightly, then cut the grilled corn off the cob.

2. Prepare the Vinaigrette

• In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until smooth and emulsified. Taste and adjust to your preference.

3. Assemble the Salad

• Chop grilled zucchini into bite-sized pieces.

• In a large bowl, combine zucchini, grilled corn, cherry tomatoes, red onion, and herbs.

• Drizzle with the vinaigrette and toss gently to coat.

4. Finish & Serve

• Top with crumbled feta if using.

• Serve immediately or chill for up to an hour to let the flavors meld.

Tips for Success

No grill? Sauté the veggies in a cast iron pan or roast them in the oven at 425°F for 20 minutes.

Add protein: Grilled chicken, shrimp, or chickpeas make this a heartier main dish.

Make it vegan: Skip the feta or use a plant-based alternative.
